The mbr usb drive created is universal and will boot on legacy bios or uefi pcs.
You can create your own gpt version based drive if you wish but no point in doing so unless you wanted it on a usb hard drive with more than 2 TB capacity.
This has been asked on the Reflect Forum and I understand they have no plans to change it.
I am pretty sure all other similar packages (Aomei, Easus, Hasleo Veeam etc.) all do it the same way using mbr format.
None has ever done it in gpt format and I have created usb drives for all of them. I do not recollect ever seeing a gpt option on any of them.

MS method is using diskmgmt to create fat32 mbr usb stick:
I have amost always done it with diskmgmt or any decent 3rd party partition manager.

On an internal gpt drive
1) create a small fat32 partition (2GB is plenty)
2) create Macrium Reflect Iso
3) mount iso as a drive
4) copy files to fat32 partition
5) create winpe boot entry using easybcd (pointing to boot.wim)
For external usb gpt drive. Basically same as above but step 5 is not needed

With GPT the "Boot Partition" is in Fat32 Format... The Actual "OS" Partition does not really matter....
Thus PE is just written using that same (single) partition...
But you can create a dual partition USB for booting a NTFS Drive
