I would recommend 500 GB minimum - which will required you to cut C: + other system partitions down to fit that. Obviously, the bigger SSD the better and 2 TB will mean you can clone your HDD to SSD with the least amount of effort and then you can use your HDD for storage - that should keep you set for a long time - so look at it as an investment.

If the space is taken by images / documents, can you use the SSD and HDD at once to have the HDD for files and the SSD purely for boot (install windows on there)?

Hi @steve108 Yes I agree a bigger SSD is handy my setup is:
256gb SSD w/ Windows + programs + docs
1tb HDD for games + heavy programs + large docs
My laptop;
128gb SSD for everything, used about 80gb with windows 10 1709 on it. (And office 365, chrome etc)
This setup seems to work well for me
My main Desktop came with a factory-installed 1TB HDD, it is split as 150GB C: and 780GB D:. For storage it's great and using a Custom install I run some of the larger programs from D:. Only thing I noticed was a Custom install of Microsoft 2013 on D: still put a portion on C:, most likely with it interweaving with Windows.
