It is a bit clunky and non intuitive.

You have to select the image you intend to create a differential backup for by selecting the RESTORE option

    Navigate to the full backup

Then select "Other Actions", and select Differential Images

    2 further questions

1 if I want to take another differential do I select the full back up to start with or the last differential?

2 when restoring an image do I have to select the full image and any diffs?

    1) Differentials are always relative to the full backup - select full backup to start with.

    2) When restoring, choose the appropriate differential - it will link to the full image automatically.

Thanks what if there's more than 1 diff?
Is it best practice not to have more than 1 and instead just take a full image?

You can have as many diffs as you like - they are independent of each other. Many have (say) 1 diff each day, and a full image weekly.

As diffs grow over time, there comes a point where it is better to do a new full image.

This is a very good practice, as Martin said.
The reason for having 1 full weekly image and 6 daily differentials, is that for instance you might want to go back to Thursday's backup, as on Friday you tried something which didn't work and you want to revert all changes.
And of course once the full one is created and you decide that you have no need for the old differentials you can always delete them.

    Thanks guys
So with that in mind if I make any major changes I should take a diff 1st and then make the change.

In terms of restore what do I choose?
If I want to restore everything from scratch would I need to choose the full back up and then each diff OR just the last diff?

    Just the last diff.
