I have tried MANY instructions to fix this error.
The only one that works is found here by copying the C:\ProgramData\windows\Windows Defender\Definition Updates and Platform folders from a Win 10 PC that works.
Sadly I used the Official MS WinPE USB boot. It is awful (crippled) :)
So finally I have windows Defender again.

For other reasons, I have also run a online repair update
but I am still in trouble with a french language ASUS AIO
I also have a 2nd PC; Both PCs use Win Defender as AV.
Any other AV package was removed years ago
AFAIK, this problem dates from February KB2267602 which always errors 0x80070643, as jumanji describes
We use Macrium Reflect, and I've just done a full image backup of the Asus AIO with the problem
I have configured the AIO to UK english, but the damned browser still goes to french language websites and my french isn't up to it; so I need some good English lang help - so here I am.
Unlike jumanji, my Security About shows no values at all
I have two PCs here both rely on MS Defender AV; mine is OK
I have just done a full image backup
I'm posting this as it, while I retry the jumanji copy and paste from my UK lapto to this french AIO for the second time
