That will depend on the anti-malware utility concerned. Go to its website and see what they say.
It's possible, just for example, that it updates its malware definitions regularly but the utility itself might only update if you use a particular option somewhere in its menu system.
I assume that you are asking about third-party anti-malware utilities and not to the built-in Windows Security.

Your question does not make sense.
The software itself will only get updated as required e.g. bug fixes or developments.
However, the antivirus definitions (one for each known virus) will get updated as frequently as new viruses are detected. Most would install these automatically, unless you choose to check manually (bad plan).
Frankly, no point in using free 3rd party tools anymore as Defender is fine.
