There's always a thread per update per build where, for feature updates, you can read about issues and see user comments following:
Known and Resolved issues for Windows 10 May 2020 Update version 2004

What is new in the Windows 10 May 2020 Update version 2004

The message tends to be- hang back and wait a bit.

A wise policy might be to wait after one is released until after the first subsequent major update.

Depends on what you mean by 'stable'. Will 2004 crash and burn on you unexpectedly? No, it's stable in that respect.

Is it bug-free? No, in my experience every new feature update has had bugs initially. Usually it's several months down the line before they all get fixed. 2004 is no exception. What bugs there are aren't 'show-stoppers', but there are some none the less.

Read the threads f14tomcat and dalchina gave links for and make up your own mind. Conventional wisdom is to wait at least a couple of months before taking a feature update. Besides, there's nothing significantly new in 2004 over 1909/1903.
