RE: Veracrpt encrypt system greyed out. It's probably down to windows being installed in UEFI rather than Legacy Bios mode for boot.

    Two more questions:

    1) If almost all new PCs ship with UEFI setups, why does Veracrypt not come up with full-drive encryption for them? Is it not possible?

    2) So if I use the method that only encrypts the Windows 10 install, that will honestly protect my information sufficiently, in your opinion?

By the way, thank you for your help so far.

Why is it greyed out, though? Do you have any idea?

I would really prefer to encrypt the entire thing
It's because of the newer GPT boot replacing the older MBR boot system, whole drive encryption is not compatible with GPT. I use Bitlocker, and it does not encrypt the OS either. Also, leaving the OS un-encrypted allows for system updates, and recovery if needed.
I used to have to decrypt my entire drive just to update the system, or run recovery.

Check if Windows 10 is using UEFI or Legacy BIOS

I'm not expert on this. Some reading material:

I wouldn't bother with it though. You risk losing your data if something goes wrong. Most people would use VeraCrypt just for encrypting personal files on a non system partition or external drive rather than going for whole disk encryption.

Bad Microsoft should just give BitLocker to non-Pro users too.
