You can have more than 1 in one day but 8 does seem like a lot.

As long as you don`t get 8 every day, I wouldn`t worry about it.

I seem to get an update following a deliberate restart. Conversely I have add occasional days with no Defender update being added to the list.

There seem to be a lot through a 24 hour period, but I suppose it`s normal.

    I just installed another.

Did you have 8 updates or 8 attempts at getting updates?

You can see a log of updates in Event viewer to check -
    Windows logs
    System
    Source - WindowsUpdateClient
    EventID - 19

    and at
    Applications and service logs
    Microsoft
    Windows
    Windows defender
    Operational
    EventID - 2000
[and EventID - 2001 provides a log of update errors]
