What is the difference between the UAC Prompt for Credentials on the Secure Desktop vs the default mode of simply Prompt for Credentials?
I have my UAC settings set to all the way High in the User Control Panel

I have my UAC settings set to all the way High in the User Control Panel
The default setting uses the Secure desktop. It is the setting below that that avoids it.
During Windows Vista/7 development, MS reported that malware could not penetrate onto the secure desktop in order to bypass approval by the user.
I have looked through some old notes and cannot find a link to the original MS document [which might not be available any more anyway]. If I stumble across it I'll add a link to it in a fresh post for you.

The dimming of your desktop is referred to as the secure desktop because other programs can't run while it's dimmed. User Account Control - MDSN
