I cannot select text in Word, nor can I select what's in an Excel cell. I can't double click on the "borders" between cells to enlarge or decrease to fit the content. IOW, double click will not work on anything. I even tried it on Notepad and it doesn't work there either. If I wanted to go back and select the second word in this post (cannot), I could not do it. Everything else mousewise works, though.
So, your problems are hardware (driver) related, not Office.
Have you checked the settings? (Of course you have, but have to ask...) :) Or switch your mouses...

I have just checked it and in my system my mouse works fine. I have selected words in Word 2016 and changed the width of a cell in Excel 2016, both actions by double-clicking.

    This is my mouse:

Sorry that this is happening to you, I wish that you will get it fixed soon.

At this point, Andre, I'm not sure what's going on. Desktop and Lappy both have Build 14291, Logitech Mouse M510 and the same build/version of Office 365 ProPlus. Lappy shows that things are working fine, but Desktop does not.

This morning I changed back to the 240GB SSD Drive on Desktop and I could finally get something done; however, as I was almost finished with the spreadsheet, things went to heck in a hand basket once more. Double click will no longer work on anything. I'm beginning to think it may be the mouse drivers, but I'm not sure.

I've been contemplating reinstalling using a wired mouse. Reading Joanne's post made me think that's what I should do. My wired mouse is a Logitech m100, but it's adequate for what I do, since I don't game. I was gonna take it back to Walmart, but at $10, it's a good thing to have a wired mouse hanging around.

Once I have Build 14291 reinstalled with the wired mouse and if things go back to working, I may try to install the HP Bluetooth mouse, since this is an HP machine. :)

Just as I was about to click on Reply and ask which mouse you have, you read my mind! Thanks.

As I told Andre, I'm going to go ahead and reinstall Build 14291 with the wired Logitech m100 mouse and see what kind of storm that causes. Hopefully, it won't. :)

Don't think, that changing to HP mouse will make a difference (they are all OEM Logitechs more or less).

Do you double click two times on left click or middle button?

Nah, not this one . . . it's wireless and has the "Unifying Receiver" which means there are special drivers and things for it. I'm thinking there's something not working properly between Build 14291 and the receiver.

The m100 mouse has nothing but OEM drivers. :)

I'm kind of a 2-button person . . . when I double click, I press the left button twice in quick succession.

And double click works in drivers section?

Andre!!!!!!!!!!!!!!!!!!!! StarFerret says she could just grab you and squeeze you to death! And smother you with ferret kisses!

I cannot believe something so simple could be the answer to my problems or that I could overlook something so simple! Because I'm a touch typist with speeds running in the 80 WPM area, I have always just thought the fastest mouse speed was best and never even gave that setting a thought!

Thank you, thank you, thank you! I wish I could give you a rep but it's not possible in Windows 10 News.

Two things I noticed in these Builds of late:

    - when you open a folder in the All Apps Menu and it's too close to the bottom that it cascades below the bottom, the cascaded portion does not automatically rise up to show all entries in that folder, the way it did in Windows 7.
    - in Build 14291, expanded folders in the All Apps Menu stay expanded, you have to close them manually, even after closing the Menu.

Hehe, great! But lets wait if it hold on.
Say thanks to Starferret and may she keep her cousins away from may cables in car.
