The command will only re-register the Store app, and will not affect anything else.
This is the message that came up in Command when I tried your command:

That usually means that you may need to do a repair install to fix the Store app without losing anything.

That error usually indicates that the Store app has been uninstalled. You could do a repair install to restore the Store app without losing anything though.

For some reason Onedrive wouldn't open so I did the re-register for current an all users but then I lost other apps which are shown in the attached photo. I tried re-registering the apps again for current and all users but it didn't fix the problem and a lot of errors are shown in the attached text file when I did this process.
Sfc /scannow and DISM repair show no errors or corrupt files. Would Use DISM /RestoreHealth /Source:esd Command fix this issue?
Is there a way to just copy the apps from the MCT windows 10 install usb? Everything else works ok and I don't want to do a reinstall of windows 10.

I'm afraid that means your apps are broken. You could do a repair install to restore apps without losing anything though.
