How to Pin or Unpin Folder Locations for Quick access in Windows 10  

I will play with this idea some more in the near future but as you say, testing a small folder out first.

It's not the same, but you could pin a folder to quick access, then keep all the files in that folder.

I'm afraid there's not an option to pin files to quick access.

Go ahead and post a screenshot showing what you see instead to see what the issue may be.

That would be a jumplist instead of quick access.

If you like, you could reset jump lists to clear all pinned items to see if that may help.
