I have a client with a new Win 10 PC and MSWord ( I think) 2016. They need to set the correct envelope orientation for the Epson printer they have. I know how to do it in MSWord 2003, but not sure if its the same in new version??

I may misunderstand your question...
I use an HP, not an Epson, but the printer's paper trays have a diagram showing how to feed an envelope for proper printing.
So, I've never had to fiddle with settings in MS Office.
However, perhaps the 2 screen shots from MS Word 2016 Pro Plus under Win10 Pro (x64) might help?
They show the dialog for "envelopes" after choosing "mailings" from the ribbon....
