I had same problem too. Mine working fine after update. however when i accidentally changed theme to white, i couldn't revert it back to black theme. Black theme option were just gone like u mentioned.
Solution i found is: i checked system restore point and saw that system restore point (critical update) were created only for office update. So after i have done system restore and reverted it back to previous office version, my black theme came back!
After u have restored office black theme, before another update comes, make sure log in to office and choose black theme. Then u might able to preserve black theme even after update.
Personally i haven't updated office yet. i have just system restore about 5 minutes ago

If you want black theme then personalize your desktop background to high contrast using something that gets your colors to where you want them. Works here and it is black black for office 2016
I have build 16.0.7167.2040 and do not have Black as an option. I only have Colorful, Dark Gray and White. If I change:
HKEY_CURRENT_USER\SOFTWARE\Microsoft\Office\16.0\Common
UI Theme value to 4
It makes office black until I close and reopen it, at which time it reverts to Colorful. So...
1) Does anyone have this build and the Black option normally?
2) If it has been removed in this build, is it possible to make this reg key stick?
I uninstalled and reinstalled mine. Still no Black. Any thoughts on how to resolve?

Do you have YOUR installer for proplus I can try? I am running proplus in the aforementioned build on 5 PCs and none of them have the Black option. They are all from the same installer too...
