Well after reverting back to Win 8.1 then upgrading back to windows 10 pro... I still get the same issue. The bluescreens stopped, and everything runs much better... But, windows update STILL wont...

Nope. So I just made a bootable USB from a Windows 8 iso I had. Comps just now starting up after the fresh install.

Well now it seems like my entire computer is screwing up... I can't open the action center to update my desktop for some odd reason. It starts to open then just disappears and it's very odd.

Well it's looking good because I signed in through my email acc at the load up menu instead of my pin number. That's a first.
I just restarted the computer after an administrative install of the driver. Aaaaaaaaand this happens STILL... I'm getting irritated.
Well it was what you said, obviously. "Realtek PCIe GBE Family Controler" driver date is way back in April of 2015............ Version number is 9.1.402.2015
