The old one worked "fine" (random boot locks up in it's whole life) this morning in the first m2 slot, it also worked fine once (but it did the same the other day)...

Ok... I cheered for victory too early.
After I mounted the new ssd, I was able to boot once on the old one properly. Then I changed the boot order on the uefi to boot on the new one (and trasfer...
Done!
I also proceeded to install both the old nvme (which was installed) and the new one.
The old one (which we messed up until now) is now able to boot properly even when the other is installed!
Everything is perfect now.
