Yes, good point, Enterprise will ignore your OEM key. I'm not even sure it actually looks for them, why would it? There won't be any systems with embedded Enterprise keys.

Also, after July next year Windows 10 won't look for or use Windows 8/8.1 OEM keys. Or any Windows 7 or 8 keys. The free upgrade offer will be over. You'll only be able to install and activate with Windows 10 keys after that date.

Why would you buy pro licenses from OEM if you are just going to turn around and load enterprise?
Our particular agreement requires a "base" license to use the volume license version. The base license has to be Pro.

Adding a PID.txt file with a Pro key will bypass the OEM key and install Pro instead.
Can you use an actual 7/8 Pro key in the PID.txt file, or does it have to be the generic 10 Pro key?

That said, your last 2 sentences suggest the generic key will install Pro and activate, as long as a previous activation with a proper Pro key has been done.
