there are several places to find the download file.
    "C:\$Windows.~BT\Sources\Install.esd"

or open file explorer and search the windows\softwaredistirbution folder for *.esd

    "C:\Windows\SoftwareDistribution\DeliveryOptimization"
    "C:\Windows\SoftwareDistribution\Download"

Right where you said it would be. C:\$Windows.~BT\Sources\install.esd

    No Install.esd or C:\RecoveryImage-install-esd.png

For ease of searching, once you have opened Sources, click on the Name tab, which will alphabetize everything. Now just scroll down to things starting with I and you should be able to find it.

I am giving below my C:\$Windows.~BT\sources folder with names tab alphabetized near i letter.
Why am I missing it? What can be the reason.

I don't have a clue as to why it's not there for you. What I showed you is from Windows Update from 10162 to 10166.

Which Build do you have and how was it installed? Although I may not be able to help, someone else might with that info.

OK, hopefully someone here will be able to help, because that's exactly what I did and as you saw, I have install.esd. It doesn't disappear for me, so I'm not sure why yours isn't there.

I was able to get the install.esd from the 10166 x64 update..
BUT - the 10166 x86 update the esd was not there

Nor found elsewhere - windows-bt ended up deleted itself

still have not been able to update the x86 to 10166 (x64 no problem)

Ah, I have x64 installed here. Never thought of that being a cause.
