    I would possibly be tempted to do a reset of the Mail app next, if that doesnt work then try a reinstall

    Settings, System, Apps & Features and then select advanced next to Mail from the list
    This should set mail back to defaults

    Then try adding gmail again and see if it makes any difference

    Only other thing i can think of is re install the app

    Recreating the account and resetting the app has not made any difference

    Just select the entry for Mail & Calendar
    Apps - Reinstall and Re-register in Windows 8 and 10 - Windows 10 Forums
