I have very strong doubts that your power supply can handle 18 drives.
Given that there has to be at least 3 SATA boards to connect to them, a shortage of power could be the issue. I cannot come up with any valid reason for that many drives unless you are running a server farm. Consider moving half or more of them to an external, independently powered cabinet(s) and connect via network. For saved-game storage, network speed is not a problem.

Possibility #2: Overclocking, especially RAM timing, voltage or temperature issues.
Sometimes just a tiny bit too hot RAM or CPU or GPU may cause it to fail. In addition to the power supply, my computer has 2 140mm fans + 2 200mm fans all blowing into the case. Only the 3 fans attached to the liquid cooler radiator suck the air from the case and out the top. In other words, keeping things cool, not just the CPU, could be a problem.

I'm only a mild overclocker in that my processor (8/2T each) idles down to as low as 17mhz clock speed when not running heavy CPU software. My biggest concern is cooking the RAM with too much voltage. So I intentionally bought RAM that is at least 1 'step' faster than called for such as buying PC4-28800 16-19-19-39 vs the slower ram called for by the ASUS for my mobo.
this is my part list from the pc
PC Builder - Intel Core i9-10900K, GeForce RTX 3090, Phanteks Enthoo Elite ATX Full Tower - PCPartPicker
system is using idle 200 watt and in full stress test 650 watt ram never go over 60c whit fan never over 53c idle ram 42c
the harddrive i keep every time i upgrade i don't think it will be the pouwer supply i have ask the store the thinking maybe the cpu its also for them very strange maybe the sata controller DeLOCK PCI Express x2 Card > 10 x internal SATA 6 Gb/s serial-ata controller but its works on my older pc
i am thinking to go upgrade to 12900k if i can't fix this runing pc on 3600 mhz and ram on 2100 still reboots random

I would not think the PSU would have a problem -providing it is performing as it should
    1600 watt
pouwer psu its AX1600i Digital 1600 watt
I suspect a ram OR CPU issue
Memtest test not only physical ram sticks, of course, but also graphics and CPU ram
it also falls out of memtest I can never do it completely because then it has failed in standard mode so on 3600 mhz cpu it cuts out and on 5ghz it does not matter

Does Device Manager show any flags ?
Are there entries in Reliability History which are related to the problem?

There's a BIOS setting you need to disable. https://dlcdnets.asus.com/pub/ASUS/m...ual_EM_WEB.pdf p.74. Presumably there's a version available for your locale.
