Surprising how many users want to 'kill off' Cortana! She's a nice girl once you get to know her!
Seriously though, I've posted a rather reckless and un-researched method to disable the entire Search UI including the background process, so you try it at your own risk!

Can't find the link but basically, get Task Manager/Details/SearchUI.exe and "C:\Windows\SystemApps\Microsoft.Windows.Cortana_cw5n1h2txyewy\SearchUI.exe" beside each other.
Right click the SearchUI.exe in Task Manager and End Task, then you've got about 2 seconds to right click and delete the SearchUI.exe in "C:\Windows\SystemApps\Microsoft.Windows.Cortana_cw5n1h2txyewy\SearchUI.exe"
Don't empty the Recycle Bin so you can Restore it if something goes terribly wrong!
Speaking of something going terribly wrong, I took ownership of the directory, deleted it, and completely broke my entire Search function, haha.
Has anybody tried this and gotten it to work on killing Cortana, though?
