Do you have a system image backup?
If yes, just restore your latest good Windows image backup with the option to reformat the partitions.

    Bitlocker

If you have any problems, presumably you have bootable media ? Installation media, or some custom winpe thing ?

probably greyed out those options because of bitlocker.

Look at this. I have absolutely no idea how this happened because I do not recall trying to enable bitlocker. I can't enable or get rid of it.

Now I suspect I just need to copy all my data and list my programs and start from scratch. I don't see anything else I can do and I think for this laptop, it is best NOT to move the user folder to a separate partitionl

Restore the backup you made before you started and be more careful next time ?

I find it very odd that your computer is still booting without the EFI System Partition.

The Computer has not been rebooted at the time he posted. But it seems it has now... (no more replies since yesterday)

I have left the laptop on because it probably won't reboot. My IT knowledge has gotten rusty over the past few years as I have gotten older. So, I need to back up my data and list the programs I have prior to turning it off since I will likely have to reinstall it.

I suggest you wait for @NavyLCDR to log back in. He's in a different timezone to you.
Just to encourage you to wait, here's how he dealt with a similar case - manually setting up a new drive and its partitions [NavyLCDR #3] - TenForums

    Best of luck,

Are you suggesting that my present configuration can be salvaged?

    Yes.

While you're waiting, I suggest you post the latest Disk Mgmt diagram [C:\Windows\System32\diskmgmt.msc].
    - Make sure you've dragged around the column header dividers in the top half of the view so all the text can be seen. {just like you might drag around column dividers in File explorer}
    - Make sure that you show all of the disks' width in the lower [diagrammatic] part.

And if it turns out that it cannot be then you can reconstruct everything by making a system image of your C:\ drive now & backing up all your own files so you are ready.
    - The reconstruction could then be to do a clean install after which you restore your old C:\ drive to the newly-installed C:\ drive.
    - I've rather lost track of comments about your system images. If you did install Macrium [free] reflect then I would urge you to use that.

In a command prompt with admin privileges:
    Code:
    diskpart
    select disk 0
    create part EFI size=100
    format fs=fat32 quick
    assign letter=s
    exit
    bcdboot C:\Windows /s S: /f UEFI
    exit
